Duchess Mashed Potatoes

A traditional French dish, pommes duchesse, also known as duchess mashed potatoes, are prepared with velvety puréed potatoes that are piped creating a rosette and baked to obtain a crispy outer layer that will delight anyone. Indulgent and creamy, these duchess mashed potatoes are the perfect side dish for any Thanksgiving or Christmas dinner.

  • 1 1/2 kilos potato
  • 8 cups water
  • 3 tablespoons butter
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups cow's milk
  • 2 pinches salt
  • 1 pinch white pepper, ground

  • Preheat oven to 374 °F.
  • Pour water into a medium-sized pot. Add potatoes. Cook over high heat for 20 minutes or until soft. Remove from water. Cool.
  • Peel potatoes. Cut into medium-sized chunks. Transfer to a food processor. Grind to a fine purée.
  • In a large skillet over medium heat, heat butter. Add chopped garlic. Fry slightly. Add mashed potatoes. Mix well.
  • Add milk. Keep cooking for 10 more minutes over medium heat, stirring constantly. Season with salt and pepper. Remove from heat. Let cool completely.
  • Place mashed potatoes in a piping bag with a drop flower nozzle. Make swirls with the mashed potatoes. Bake for 10 minutes. Serve duchess mashed potatoes right away.
