  • In a small pot, soak porcini mushrooms in boiling water for 30 minutes.
  • Remove mushrooms from water and set aside. Save mushroom water and add chicken broth.
  • In a large skillet, heat oil and butter over medium heat. Add onion and fry for 10 minutes or until translucent.
  • Add garlic and cook for 2 more minutes. Add mushrooms and cook until golden brown.
  • Add white wine and cook over high heat for about 5 minutes or until wine evaporates.
  • Add rice and brown with butter for 5 minutes.
  • Pour ½ cup of broth at once and start cooking rice, stir constantly using a wooden spoon. Once broth evaporates add another ½ cup.
  • Repeat for about 20 minutes or until rice is cooked
  • Add Parmesan cheese, mix, and serve mushroom risotto right away.
