Potato & Bacon Casserole

  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 6 potatoes, large
  • 1/2 onions
  • 1 pinch salt
  • 1 pinch pepper
  • 250 grams bacon
  • 1 bunch fresh thyme

  • Preheat oven to 356 ºF.
  • Melt butter in microwave. Add olive oil and mix thoroughly.
  • Grease baking dish with previous mixture.
  • Peel potatoes. Cut potatoes and onion into thin slices.
  • In the greased baking dish, arrange potatoes vertically, alternating with onions, making a circle along the edge. Make smaller inner circles until the baking dish is full. Brush potatoes and onions with olive oil and butter. Season with salt and pepper.
  • Bake uncovered for 1 hour and 25 minutes. Add more butter if necessary.
  • Cut bacon into small-sized squares and fry. Transfer to a paper towel-lined plate to remove excess oil. Remove potatoes from oven and top with bacon and fresh thyme.
  • Remove potatoes from oven and top with bacon and fresh thyme.
  • Bake again for about 30 minutes. Season with salt and pepper and serve potato & bacon casserole.
