Spanish Patatas Bravas

  • Preheat the oven to 220°C.
  • Toss potatoes with 1 tablespoon olive oil, salt and pepper to taste. Spread them out on a baking sheet. Bake for 40 minutes or until potatoes are soft and lightly browned, turning after 20 minutes to brown on both sides.
  • Heat the remaining tablespoon of oil in a saucepan over medium heat, sauté the onion and garlic for 3 minutes, stirring occasionally. Add the paprika, tomato puree and chili flakes. Cook for 5 minutes stirring. Remove from the fire.
  • Preheat oven to 428 °F.
