In a mixer over medium speed, mix eggs and sugar with a wire whip until fluffy and doubled in size. Lower speed and add butter in an even stream. Mix until completely incorporated. Add 1/3 of the flour alternating with baking powder and 1/3 of milk until all the ingredients are used up. Add salt and vanilla essence. Mix for 1 minute. Divide dough into 2 even portions. Add cocoa and red food coloring to 1 portion. Add blueberries and blue food coloring to the second portion. Place cupcake liners in a cupcake pan. Fill half cupcake pan with red batter and the other half with blue batter. Bake for 20 minutes at 356 ºF. Cut cupcakes in half horizontally or cut the top. Fill with whipped cream. Alternate cupcake tops. If the cupcake base is red, the top must be blue, and vice versa. Garnish 4th of July cupcakes with whipped cream and sugar pearls.
