Preparation
In a small pot over medium heat, cook fava beans with salt for 30 minutes or until soft. Drain and set aside.
In a bowl, mash fava beans to a purée. Add garlic and Cotija cheese. Season with salt. Set aside.
In a bowl, mix nopales, onion, and cilantro. Set aside.
Mix masa dough and lard. Add salt and water until a moist and soft dough is formed. Set aside.
Take a small dough ball. Using your hands, poke a hole at the center. Stuff with a bit of fava bean paste. Close and shape like a tlacoyo, as shown in the video.
On a griddle over medium heat, cook tlacoyos on both sides for 10 minutes. Set aside.
Serve Mexican fava bean tlacoyos with nopal salad, queso fresco, and red salsa.
