For the stuffing: In a container, mix apples, pecans, ginger powder, thyme, honey, and white wine until perfectly incorporated. Set aside. For the glazing: In a saucepan over medium heat, melt butter. Add apple purée, orange juice, and chicken broth. Cook for some minutes. Add bay leaf, clove, cinnamon, star anise, honey, ginger powder, and white wine. Season with salt and pepper. Cook for 5 more minutes. Set aside. Using kitchen twine, tie the chicken’s legs. Insert a toothpick in each wing to keep them in place. Stuff chicken with apple and pecan mixture. In a baking sheet greased with butter, place stuffed chicken. Place onion, apples, and pecans around the chicken. Pour glazing sauce. Add cinnamon sticks. Season with salt and pepper. Cover with aluminum foil. Bake at 392 °F for 45 minutes. Remove chicken from the oven, brush with honey and bake at 392 °F. for 15 minutes or until golden brown. Remove from oven. Place on a platter. Serve apple pecan-stuffed chicken with apple slices. Garnish with cinnamon and thyme.
