Preparation
In a pot over medium heat, melt lard. Add each of the chicken cuts and let cook for 10 minutes.
Add water, salt, cola, orange juice, thyme, onion, and garlic. Cook for 1 hour over medium heat. Stir constantly to keep chicken from sticking or getting too brown at the bottom of the pot.
Once liquid is reduced, remove chicken. Shred on a chopping board and set aside.
Serve chicken carnitas on tortillas and top with cilantro, onion, lime, and salsa.
