This recipe for chicken enchiladas combines another classic Mexican dish: mole verde. For the mole verde: In a small pot over medium heat, heat a bit of oil and fry pumpkin seeds. Cook until golden brown. Remove and reserve. In the same pot, fry sesame seeds. Remove and reserve. Repeat steps with almonds. In the same pot, fry tomatillos, onion, and garlic. Add cumin, allspice, cilantro, and epazote. Return reserved seeds to the pot. Pour chicken broth and cook for 10 minutes. Cool slightly and reserve. Transfer previous preparation to a blender Add chard leaves and blend until smooth. In a small pot over medium heat, heat a bit of oil. Pour mole. Season with salt and pepper. Cook over low heat for 30 minutes. In a skillet heat oil and fry tortillas on both sides, for 30 seconds. Drain on paper towels to remove excess oil. For assembling the chicken mole verde enchiladas: Stuff tortillas with shredded chicken. Place enchiladas on a plate and spoon over mole verde. Top with cream, cheese, onion, sesame seeds, and epazote.
