Microwave whipping cream in 30-second intervals. Set ¼ of whipping cream aside and add white chocolate. Mix until completely incorporated. Refrigerate and set aside. Add bittersweet chocolate to the remaining ¾ of whipping cream and mix until completely incorporated. Refrigerate and set aside. Cut Chocorroles into 0.3-inch slices. Set aside. In a bowl, whisk white chocolate whipping cream until doubled in size. In a bowl, whisk bittersweet chocolate whipping cream until doubled in size. Line a bowl with plastic wrap and arrange Chocorrol slices over the edge until covered. Spread a layer of white chocolate mousse over Chocorrol slices. Pour bittersweet chocolate mousse into the Chocorrol roll-lined bowl. Refrigerate for 2 hours or until set. Divide whipped cream into 2 portions. Add cocoa to one portion and mix until completely incorporated. Transfer both mixtures into a piping bag with a star nozzle. Set aside. Unmold Chocorrol charlotte royale and garnish with bicolor whipped cream. Serve Chocorrol charlotte royale cold.
