For the crust: In a plastic bag, place orange cookies. Using a rolling pin, crush orange cookies until a fine powder is obtained. Transfer cookie powder to a bowl. Add butter and rainbow sprinkles. In a 9-inch pan, add cookie powder. Using a silicone spatula, press tightly to form the crust. For the rainbow cheesecake: In a mixer, combine cream cheese, whipping cream, and condensed milk and mix for 5 minutes. Add vanilla essence and unflavored gelatin. Divide mixture into 4 portions. Dye each portion with a different food coloring. Using a spoon, add dyed mixture little by little on top of the crust alternating the colors. Add dyed mixture until pan is full. Refrigerate until set. Unmold no-bake rainbow cheesecake. Garnish no-bake rainbow cheesecake with whipped cream and rainbow sprinkles.
