Energy content
It is the quantity of energy a food provides from the total energy you need daily to carry out the metabolic processes needed by your body and the energy you need to burn during the day to function.
Carbohydrates
They are those nutrients whose main function is to provide energy to the body, mainly for the brain and the nervous system. They include sugars, starches, and fiber. Starches are present in cereals (bread, tortilla, rice, corn, etc.), legumes, potatoes, and jicama, among others.
Sugars
They are present in fruits (fructose), milk (lactose), white sugar (sucrose), and honey (glucose + fructose), among others. Simple sugars or monosaccharides (glucose, fructose, and galactose) are absorbed in the intestine without needing prior digestion, so they are a quick source of energy, while complex sugars must be transformed into simple sugars to be digested (like starches).
Dietary fiber
It is present in vegetables, fruits, dried fruits, whole-grain cereals, and legumes. These molecules are so complex and resistant that we are not able to digest them and they arrive in the intestine without being absorbed. It helps clean the large and the small intestines.
Protein
They are essential for the body as it needs them to repair and sustain itself. They can be found in animal food like meat, dairy products, poultry, and eggs, as well as in some vegetable sources like beans, legumes, peanut butter, and grains like wheat germ.
Lipids or fats
They can be found in vegetable oils (olive oil, corn oil, sunflower oil, and peanut) which are unsaturated fatty acids as well as in animal fats (bacon, butter, and lard) that are rich in saturated fats. Saturated fatty acids are more difficult for the organism to use as they are hard to break down into smaller bits, thus, they can accumulate and form plaques that cause clogged arteries.
Cholesterol
It is an essential substance for the metabolism. Cholesterol exists naturally in all the parts of the body and a certain amount of it is needed for the body to function properly. High cholesterol levels increase the risk of heart disease.
