Using a needle, poke a hole in the bottom of each eggshell. Using a thin knife, cut out wider 0.3-inch holes. Work the needle around each eggshell breaking up egg whites and egg yolks. Remove egg mixture from the eggshells. Rinse off the shells with water. In a pot, heat 4 cups of water and 1 tablespoon of vinegar. Add the eggshells and boil them for 10 minutes to sterilize them. Remove eggshells and dry thoroughly. In a deep bowl, mix 12 food coloring drops, 4 tablespoons of vinegar, and 2 cups of boiled water. Using a plastic spoon, dip eggshells into the mixture to dye them. Let eggshells dry thoroughly. In a pot, melt chocolate in a water bath. Transfer melted chocolate to a piping bag with a fine piping nozzle. Pipe melted chocolate into each eggshell until full. Arrange chocolate-filled Easter eggs in an egg carton with the pierced side up. Refrigerate chocolate-filled Easter eggs for at least 4 hours before serving.
