Preparation
For the mole sauce: In a pot, add lard, almonds, peanuts, pecans, pumpkin seeds, sesame seeds, cinnamon, cloves, allspice berries, cumin, garlic, onion, chiles, tomato, and dry shrimp. Pour shrimp broth into the pot and cook for 10 minutes. Let cool and set aside.
Transfer to a blender and blend until smooth. In a skillet, pour blended mixture, add a bit of lard, and fry. Add Mexican chocolate and cook for 30 minutes. Stir constantly.
In a pot with water, cook romeritos over medium heat for 10 minutes. Drain and add romeritos, shrimp, potatoes, and nopales to the mole sauce.
Serve traditional mole & shrimp romeritos with bread.
