Preheat oven to 356 ºF and line baking sheets with parchment paper. In a food processor, combine flour, sugar, butter, and salt and grind until smooth. Using a fork or whisk, whisk egg whites and vanilla. Transfer to the food processor and grind until a cookie dough is formed. Transfer dough to a floured flat surface and ball with your hands. Using a floured rolling pin, roll out cookie dough. Using a heart-shaped cookie cutter, cut cookie hearts. Arrange cookie hearts on a baking sheet and bake for 10 minutes. The baking time will depend on the cookies’ thickness. Check them constantly to keep them from burning. Serve heart butter cookies with mini marshmallows.
