Preparation
In a pot, heat butter and add onion, garlic, leek, and celery. Cook over medium heat until they turn color. Add flour and brown slightly. Add chicken broth and cook for over 5 minutes. Set aside.
Transfer mixture to a blender, blend for 5 minutes until smooth and return to the stove. Add Gouda and cream cheese. Cook for 10 minutes over low heat until cheeses are perfectly incorporated. Season with salt and pepper. Set aside.
