Preheat oven to 338 °F.
In a pot over medium heat, heat water, piloncillo, anise, and cinnamon stick until a caramel is formed. Let cool and set aside.
In a bowl, sift flour, sugar, and baking powder. Add butter and mix with your hands until a crumbly consistency is obtained.
Add egg and piloncillo syrup. Knead to a homogenous dough. Refrigerate for 30 minutes.
On a floured surface, roll out dough to 0.1-thickness. Using a piggie-shaped cutter, cut the dough. Arrange on a baking sheet and brush with milk.
Bake traditional puerquitos de piloncillo for 15 minutes, let cool, and serve.
Presentation
Serve traditional puerquitos de piloncillo on a plate and pair with a glass of cold milk.
Tips
Since it has a high butter content, refrigerating the dough before cutting it will make it firmer.
